Apple Pie Overnight Oats

This easy recipe is great to hit your protein goals at breakfast!

Ingredients

  • 1 large diced apple
  • 2 cups old fashioned oats
  • 2/3 cup unsweetened applesauce
  • 2.5 cups of milk or pre-made vanilla protein shake (3 cups if cooking overnight)
  • 1 TBSP cinnamon
  • 1 TBSP pure maple syrup or honey
  • 1.5 tsp of vanilla extract

Makes approximately 4 servings.

Directions

  • Starting with the first ingredient (apples) and working your way down to the last (vanilla), dump everything into your slowcooker.
  • Using a spatula or wooden spoon, gently stir everything together.
  • Cook on Low for 2-3 hours or "Keep Warm" overnight.
  • Toppings - To hit the optimal protein intake of 30-50 g, pair it with 2/3 cup of greek yogurt and 1 TBSP of peanut butter. You could also scramble 2 eggs and 1/4 cup of eggs whites and eat on the side.
