Harvest bowls are an excellent meal to whip up during the colder months, because they pack in all of the veggies, protein, and whole grains! They also store well and make for great meal prep throughout the week.
Ingredients
1 butternut squash, diced
1 red onion, diced
2 pounds ground turkey
curry powder, to taste
1 bag spinach
1 bag brussel sprouts, chopped
1 bag (10 oz) of frozen brown rice
goat cheese, for topping
Directions
Dice the butternut squash and put in the air fryer (or oven) at 400 degrees for 20 minutes, or until brown and soft.
Dice red onion, and sauté.
Add in ground turkey, breaking into pieces as you cook.
Season to taste with curry powder, salt, and pepper.
Add one whole bag of spinach to the ground turkey mixture. Stir, and cover with the lid to cook down.
Once the butternut squash is done, take it out and add to the pot.
On the brussel sprouts, drizzle olive oil, salt, pepper, and garlic powder on your brussel sprouts. Put them in the air fryer for 15 minutes.
Microwave the brown rice, according to directions. Add to the ground turkey mixture and stir until combined.
Serve into bowls. Top with brussel sprouts and goat cheese, and enjoy!
