- Dice the butternut squash and put in the air fryer (or oven) at 400 degrees for 20 minutes, or until brown and soft.
- Dice red onion, and sauté.
- Add in ground turkey, breaking into pieces as you cook.
- Season to taste with curry powder, salt, and pepper.
- Add one whole bag of spinach to the ground turkey mixture. Stir, and cover with the lid to cook down.
- Once the butternut squash is done, take it out and add to the pot.
- On the brussel sprouts, drizzle olive oil, salt, pepper, and garlic powder on your brussel sprouts. Put them in the air fryer for 15 minutes.
- Microwave the brown rice, according to directions. Add to the ground turkey mixture and stir until combined.
- Serve into bowls. Top with brussel sprouts and goat cheese, and enjoy!
