Healthy Banana Bread Muffins

These simple, healthy muffins are a great way to use up ripe bananas!

Ingredients

Wet Ingredients

  • 3 very ripe bananas - mashed
  • 2 eggs
  • 1 tsp vanilla
  • 1/4 cup honey

Dry Ingredients

  • 1 cup oat flour
  • 1/2 cup vanilla protein powder
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • Optional: chocolate chips

Directions

  1. Mix dry ingredients together in a bowl.
  2. Mix wet ingredients in a bowl.
  3. Combine wet and dry ingredients.
  4. Bake at 350 degrees Fahrenheit for 18-20 minutes. (about 1/4 cup of batter in each muffin tin)

Serving suggestion: Serve in a bowl with Greek yogurt and a drizzle of peanut butter!
