- Preheat the oven to 375 degrees.
- On a large baking sheet, toss together chopped vegetables with olive oil, diced tomatoes, and seasonings.
- Put in the oven to roast.
- Prepare your meatballs by combining ground beef, parsley, cilantro, diced jalaphenos, salt, pepper, eggs. and breadcrumbs. Mix until well combined.
- Form the beef mixture into meatballs and place them on top of the vegetables on the baking sheet.
- Cover the baking sheet with foil and bake for 30-45 minutes, or until the beef is cooked through and the vegetables are tender.
