Mediterranean Meatballs & Veggies

Ingredients

  • 2 zucchinis, sliced
  • 1 sweet potato, diced
  • 3-5 carrots, sliced
  • 1 large red onion, chopped
  • LOTS of whole garlic cloves
  • 1 can diced tomatoes, drained
  • olive oil
  • paprika
  • oregano
  • salt and pepper
  • 2 pounds of ground beef
  • 1 bunch parsley, chopped
  • 1 bunch cilantro, chopped
  • 2 jalapenos, seeded and diced
  • 2 eggs
  • 1/2 cup breadcrumbs

Directions

  1. Preheat the oven to 375 degrees.
  2. On a large baking sheet, toss together chopped vegetables with olive oil, diced tomatoes, and seasonings.
  3. Put in the oven to roast.
  4. Prepare your meatballs by combining ground beef, parsley, cilantro, diced jalaphenos, salt, pepper, eggs. and breadcrumbs. Mix until well combined.
  5. Form the beef mixture into meatballs and place them on top of the vegetables on the baking sheet.
  6. Cover the baking sheet with foil and bake for 30-45 minutes, or until the beef is cooked through and the vegetables are tender.
