Veggie-Loaded Taco Crockpot Soup

Ingredients

  • 1-2 pounds of lean ground beef
  • 1/2 onion, diced
  • 2 zucchini, diced
  • 1 bell pepper, diced
  • 1 can black beans, rinsed
  • 1 cup frozen corn
  • 1 can diced green chiles
  • 1 jar salsa or 1 can crushed tomatoes
  • 1 packet of taco seasoning
  • 2-3 cups beef bone broth

Directions

  1. Saute the meat and veggies until the meat is cooked through and the veggies have softened.
  2. Add the meat and veggies to the bottom of your slowcooker.
  3. Layer the rest of the ingredients on top.
  4. Mix the ingredients together.
  5. Cook on high for 3 hours or low for 6 hours.

Topping ideas: lime juice, avocado, plain greek yogurt, handful of tortilla chips
